Assistant Food & Beverage Manager

Position Summary

The Assistant Food & Beverage Manager works closely with the Food and Beverage Manager to oversee, operate, and develop all Food & Beverage operations at Mt Seymour throughout the summer and winter seasons, including The Rockchute Bar and Restaurant, Grillwork's Casual Dining Restaurant, Harold's Café, Catering and Events, and outdoor patio operations. This role is developmental in nature, preparing the successful candidate for advancement to Food and Beverage Manager within approximately 12–18 months.

  • Ensure compliance with all Mt Seymour policies and procedures, B.C. liquor and health regulations, Food Safe requirements, and WorkSafe (WCB) regulations.
  • Understand and comply with loss prevention policies and procedures, including monitoring departmental charge accounts.

Menu, Product & Service Standards

  • Create fresh, innovative, and cost-effective menus, product offerings, and daily/weekly specials that appeal to guests.
  • Maintain high standards of food and beverage quality, presentation, and service at all times.
  • Ensure cleanliness is maintained across all food and beverage areas, including public, staff, and kitchen spaces.
  • Help ensure service timing and standards are met, offering hands-on support and solutions as needed.

Inventory & Cost Control

  • Maintain appropriate inventory levels through timely purchasing, effective storage, and stock rotation; conduct monthly food and beverage inventories.
  • Oversee beverage ordering, controls, and par stocks, as well as chemical ordering and inventory.
  • Track and manage product and labour costs, and monitor waste, spoilage, and spillage.
  • Develop and adhere to the annual Food & Beverage operating budget.

Revenue & Cash Control

  • Develop and maintain revenue and cash controls for the department.
  • Oversee and supervise all cash handling, floats, and daily cashouts.
  • Ensure daily checklists, cash handling procedures, temperature logs, and Food Safe guidelines are completed and followed.

People Leadership

  • With the support of Food & Beverage Supervisors, hire, train, schedule, and evaluate the performance of approximately 65 Food & Beverage staff.
  • Provide direction on section assignments (Rockchute Kitchen & Bar) and staff break timing based on business volumes.
  • Monitor staff attendance and performance, documenting and addressing issues in a timely manner and consulting the Food and Beverage Manager as appropriate.
  • Assist with new hire paperwork, termination forms, and related payroll information.
  • Accurately record and submit payroll hours via the Payworks system on a daily, weekly, and bi-weekly basis.

Operations & Safety

  • Identify and report maintenance and safety issues to the Food and Beverage Manager or appropriate personnel.
  • Ensure all workplace injuries/accidents are reported and documented per company standards.
  • Support special events as required, including setup, service, and execution.
  • Explore and develop new growth opportunities for the Food & Beverage department.
  • Provide guests with information about Mt Seymour as needed.
  • Perform other related duties as required.

Qualifications

Education & Experience

  • Credentials in Food and Beverage/Hospitality Management, combined with a minimum of 3–5 years of high-volume Food & Beverage management experience.
  • Strong culinary background and skills.
  • Previous experience with ordering and inventory management for food and beverage items.
  • Previous budgeting experience with a high aptitude for financial management.

Certifications

  • Serving It Right certificate.
  • Food Safe certification Level 2

Business & Financial Acumen

  • Strong business skills, with the ability to innovate and develop food and beverage offerings that meet the evolving needs of the business and maximize revenue throughout the year.
  • Goal-oriented, with strong organizational and time management skills.
  • Ability to work well under pressure in a high-volume environment.

  • Strong interpersonal skills, with the ability to build and lead a cohesive seasonal Food & Beverage team.

Other Requirements

  • Intermediate proficiency in MS Word and Excel.
  • Flexible attitude, with the ability to adjust priorities in a weather-dependent industry.
  • Valid driver's license and access to a vehicle to travel to and from work.
  • Availability to work flexible shifts, including evenings, weekends, and holidays.

Terms of Employment

  • Full-Time, year-round management position
  • Benefits to include medical, dental, extended health, LTD and Life Insurance - 50% cost split between employee and company.
